A classic summer salad with balanced flavors.
This salad is a simple way to enjoy the produce from your summer garden. The crunch of the fresh cucumbers and onions and the bite of the vinegar balanced by just a bit of sugar makes for a great side to a summer meal. Learn more about sugar’s role in balancing flavors in foods here.
Ingredients:
- 2-3 cucumbers
 - 1 onion (red or white)
 - 1 cup vinegar (white or apple cider)
 - 1 cup water
 - ¼ c sugar (more or less to taste)
 
Directions:
- Peel (if desired) and thinly slice the cucumbers
 - Slice the onions.
 - Combine water, vinegar and sugar in a bowl with a lid and stir until combined.
 - Add cucumbers and onions to vinegar mixture and stir.
 - Place in the fridge for a few hours before eating (less time is ok too!).
